The main components of the osmotic dehydration plant were osmotic dehydration chamber, heating chamber, stirrer assembly, base plate and frame. The heating chamber was filled with water and the osmotic dehydration chamber with hypertonic solution of standardized concentration. The water was heated and circulated through the annular space between the walls of the osmotic dehydration chamber so as to heat the hypertonic solution. When the temperature of the hypertonic solution reaches the required temperature, the heating will be cut off automatically. Then the fresh green pepper berries were fed to the osmotic chamber where a perforated stainless steel vessel was provided to hold the pepper. A mechanical stirrer which was directly coupled to a motor is provided in the dehydration chamber for uniform mixing. At the end of the optimized period, the samples were withdrawn from the osmotic solution, drained and gently blotted with the filter paper to remove the adhering solution.
